Do not beat or whisk the eggs, but break them and mix gently with a fork.

eggs combined with a fork

Setup a non-stick frying pan on a medium heat.

Throw in around 1 Tbsp (15g) of the butter into the pan and it should froths up as soon as it hits the pan but not browning.

Pour the omelette mixture into the pan and use a spatula to draw figure eight on the surface while letting the bottom cook for a round a minute or two.

egg mixture added to pan

Occasionally lift the pan up and swirl the egg mixture around the pan so the uncooked egg falls around the edges and the omelette base expands in size.

Also still keep using a spatula to draw figure eight on the surface.

Add extra butter on the surface and under the omelette at this point if you desired.

Check that the bottom of the omelette is nicely golden while the surface is setting but still a little runny.

Slide the omelette onto the plate and fold in half.

Season with extra salt and pepper to taste and serve immediately.
