Homemade Mozzarella Sticks

Mozzarella Sticks

This recipe is one of those that, if you have never tried it before, once you try it, you will wonder where it’s been all your life.

Be warned; once you learn how to make mozzarella sticks at home, they will fast become a family favorite, which means getting pestered for them almost daily!

Mozzarella sticks can be tricky to get the hang of frying, and you might get the odd one that oozes cheese from its side. That is why it’s important to freeze them for at least 30 minutes before frying, and once they are out of the freezer, try to cook them as quickly as possible.

What you need to make Homemade Mozzarella Sticks

  • All-purpose flour or plain flour: Is used for the initial coating of the mozzarella sticks.
  • Eggs: Use a couple of large eggs; use cage-free if you can.
  • Mozzarella: The star of the show, you can use any of your favorite brands. We used a ‘La Casa Del Formaggio Mozzarella’ during cooking.
  • Panko breadcrumbs: These are a Japanese style of breadcrumb. It makes a lovely light and crunchy coating. You will find panko crumbs in most large stores; you might have to look in the ‘Asian’ food section.
  • Salt: Mozzarella is slightly salty but does still need some seasoning.
  • Pepper: Try to use freshly cracked black pepper if you have some. If not, then you can use the powdered kind.
  • Sweet paprika: You could switch things up by using hot paprika. 
  • Chicken stock powder: Having chicken stock powder adds more flavor and that prized umami flavor.

How to make Homemade Mozzarella Sticks

  1. Cut: Begin by preparing the mozzarella sticks by slicing them into 1-inch thick sticks.
  2. Prepare: Get your bowls set up, ready for dredging the mozzarella.
  3. Flour: Dust, the mozzarella in flour, brushing off the excess.
  4. Egg: Dip the mozzarella stick into the mixed egg, making sure it’s fully covered in egg.
  5. Crumb: Next, place the stick into the panko crumbs again, ensuring it’s covered evenly.
  6. Freeze: Place the completed mozzarella sticks into the freezer. Please remember this step!
  7. Heat oil: Oil temperature needs to be between 392-428℉ (200-220°C). 
  8. Fry: Carefully place the mozzarella stick into the hot oil. Keep an eye on them as they only take between 30 seconds – 1 min.

Ingredients

  • 15.8 oz mozzarella ball
  • 2 large eggs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sweet paprika
  • 1 tbsp chicken stock powder
  • 3.5 oz all-purpose flour
  • 3.5 oz panko breadcrumbs
  • 33.8 floz cooking oil

Instructions

  • Cut and trim Mozzarella cheese balls into 1-inch thick sticks.

Preparation

  • Prepare three mixing bowls.
    Mix salt, pepper, sweet paprika, chicken stock powder, and flour in the first bowl.
    Beat the eggs slightly in the second and pour Panko breadcrumbs into the third bowl.
  • Start dredging by coating the Mozzarella sticks in the flour mix, shaking off any excess, submerging them in the egg, then dipping them in the breadcrumbs.
  • Place the coated Mozzarella sticks evenly on a plate, then put them in the freezer for 30 minutes.

Frying

  • Pour in cooking oil, making sure there is enough to submerge the Mozzarella sticks completely. Heat the oil to 392-428℉ (200-220°C).
  • Gently drop the Mozzarella sticks into the pan, away from yourself, to avoid any splashes from the hot oil.
  • Cook quickly until golden without turning. It will take around 30 seconds – 1 min; longer than that, you will start to see the Mozzarella cheese melt and leak out of the coating, which can be very messy.
  • Using tongs to pick the Mozzarella sticks up gently, move them to a cooling rack or rest them on a plate with some paper towel to absorb the excess oil.
