Fried Cauliflower Rice

Giving up or cutting down on rice, especially fried rice can be difficult, fried cauliflower rice is a great substitute. With this recipe, although not identical it gets pretty close in flavour and texture to fried rice.

Fried Cauliflower Rice Recipe

Yields: 2 – 4 serves

Ingredients

17 oz (500g)Frozen Cauliflower Rice
2 tsp Chicken stock powder
1/4 tsp Cooking salt (A pinch)
1 tsp Black pepper
1 Tbsp Soy sauce
2 tsp Kecap Manis (sweetened dark soy sauce)
1 Tbsp Granulated sugar
1 Bunch of Scallions, cut into 2 in (5CM) sticks
1 Large brown onion, slices
2 Cloves of garlic, finely chopped
3 Tbsp Olive oil

How To Make Fried Cauliflower Rice

Mix soy sauce, Kecap Manis, and sugar in a small mixing bowl, stir until sugar is dissolved and set aside. Cut up all of the ingredients so everything is ready to go.

Add olive oil into a hot work on high heat. Test the oil temperature with a small piece of onion, if it starts to fry, the oil is ready.

Add chopped garlic and onion slices, fry until aromatic and soften, for around 1 minute.

Add frozen cauliflower, stir to ensure the cauliflower is well coated with the hot oil and the onion.

Keep stirring until the cauliflower has softened, around 3 minutes.

Add salt and 1 tsp of the chicken stock powder, stir to combine and cook for at least 3-5 minutes.

Add the scallions, stir until they are wilted down a little, around 2 minutes.

Pour in the sauce mixture, stir to combine and fry until the sauce is all absorbed into the rice for around another 3-5 minutes.

Finally sprinkle black pepper on top of the rice as finishing touch.

Serve fresh from the wok.
