This Cauliflower Mash Recipe is hands down one of the best substitutes for mashed potato. There’s still a hint of cauliflower taste, but the butter and cream make it smooth and delicious.

Cauliflower Mash Recipe

This recipe is straightforward and is sure to become a staple in your family’s weekday dinners; however, you will need a food processor for this one.

Cauliflower mash is versatile and goes well with a number; you could add some cheddar cheese, truffle oil, or even a side of beef gravy to go with it.

Ingredients

  • 2.2 lbs whole cauliflower cut into 1”-2” (2.5-5CM) chunks.
  • 2 oz unsalted butter softened
  • 1 tbsp chicken stock powder
  • 1/2 tsp ground black pepper
  • 1.69 floz heavy cream

For Cooking the Cauliflower

  • 2 1/2 qt water
  • 1 tbsp rock salt

Instructions

  • Boil water: Add water and rock salt into a large pot on a high heat.
  • Cook the cauliflower: Add the cauliflower chunks into the boiling water. Boil for 15-20 minutes or until its softened, you can test its readiness by pricking a knife/fork into it.
  • Drain: Using a colander, drain the water off and allow to cool slightly.
  • Add Butter: Add the cooked cauliflower chunks into a food processor along with the butter, chicken stock powder and pepper, then process until smooth.
  • Add Cream: Pour in the heavy cream, process once again until the mash is silky smooth.
  • Serve: Lastly, serve in your favourite bowl keeping it warm until serving, add some gravy on the side for something a little extra.

Notes

If you would like to make sure the texture is really silky, then pass it through a metal sieve before serving.

Ingredients

  • Fresh cauliflower: You can use frozen cauliflower for this recipe, cooking times will vary a little. 
  • Butter: Unsalted butter was used; you could get away with salted butter if that’s all you have, but you might need to reduce the stock powder slightly.
  • Chicken stock powder: Beef stock can also work well or even a vegetable stock powder.
  • Ground black pepper: Use the freshly ground stuff for extra flavor.
  • Heavy cream: Use heavy cream for the best results, whipping cream will also work in a pinch.

  2. Cook: Cook the cauliflower until soft.
